Aioli Egg Sandwiches.

Being a college who is frequently stretched on time and money, this recipe is a favourite. Again focussing on using up the content of the fridge, this recipe uses minimal ingredients, and is cheap, quick, filling and super yummy.

Time: 15 mins

Serves 2

Ingredients:

  • 4 tablespoons Aioli sauce
  • 2- 3 eggs
  • Chopped shallot bunch
  • Salt
  • Pepper
  • White bread
  • Butter

Method

  • Place eggs in saucepan of boiling water, and simmer for 8 minutes or till hardboiled
  • Wash with cold water and peel. Chop into small rough pieces.
  • Add aioli sauce to coat eggs.
  • Add chopped shallot and mix. Season with salt and pepper accordingly.
  • Spoon over bread.
