Pasta Alfredo, one of those soul satisfying food in wintertime. This recipe helps cut down a little bit of that calorie content, as well as being lactose free. All the while staying pretty much true to the dish you love. It’s also perfect for using up the leftover contents in your fridge. Ingredients below can all be found at your local Coles or Woolworths.

Ingredients:
200 g San Remo Tagliatelle pasta
1/2 cup roast chicken (tinned chicken is also possible)
1 egg
1/4 cup Liddells Colby cheese
1/4 cup Liddells lactose free mixed shredded cheese
1/2 brown onion
2 tablespoons Liddells light lactose free sour cream
1 tablespoon olive oil
Salt
Pepper
Method
- Bring pasta to boil in a large pot for 10-15 mins or till all dente.
- Heat olive oil in a saucepan for 3 mins.
- Chop onion and chicken and mix together. Add to oil and fry till caramelised.
- Drain pasta, keeping 1/4 cup water as reserve.
- Combine with chicken and onion.
- Add sour cream, and grate in cheese, stirring frequently.
- Crack egg over pasta to coat. Stir for 1/2 minute.
- Add a generous amount of salt and pepper.
- Serve with mozzarella.
