Inspired by WhatsUpMoms Hidden Veggie Mac and Cheese
This is my lazy take on hidden veggie cooking.
Ingredients
1 packet orecchetti pasta
Tinned carrots
1 large brown onion
Mozzarella or cream cheese
Garlic paste
Boil pasta and drain leaving some pasta water inside.
I used tinned carrots which are already soft and could be put straight into blender gradually with water. Add garlic paste, pepper and blend for 40 seconds until thick and smooth.
Chop up onions. Fry for 10 minutes until lightly brown. Add to blender and blend for two minutes until it becomes a paste consistency.
Add onions to carrot mixture and blend everything together until smooth.
Heat up olive oil in pan and add pasta
Add carrot sauce and half cup mozarella and stir together until cheese is combined
Serve immediately.
