Grilled Pepper Chicken

This is a a great carb free high protein meal!

As my cooking journey continues here is my take on the classic chicken and veg.

Ingredients

750g chicken thigh fillets, diced (breast is also possible however I prefer thigh as it is more tender)

honey soy marinade

2 red peppers

square baking tin

Method

  1. Marinade chicken with honey and soy. Slice peppers and toss together with chicken in baking tin. Refrigerate overnight.
  2. Heat at 180 degrees for 20 mins
  3. Serve with spinach and fresh greens
