Student Meals: Acai Bowls

I thought i’d start a new section on student meals, and give a little introduction to myself, as background. I’m currently a third year student at UNSW, Sydney and as such am always looking for ways to make meals which are filling, economical as well as nutritious  and tasty. Acai Bowls are a go to option for before those 9 am tutorials, in-between classes or as snack on a super hot day. Here is my student friendly take on the dish. You will need:

200g  Amazon Power frozen acai puree

1 banana

1 packet Thinkfood Munch Roasted Almond Snack

1/2 cup strawberries

1/4 cup shredded coconut

1 tablespoon cinnamon

Honey

  1. Measure 200 g frozen acai puree and serve in bowl, taste and add honey if necessary
  2. Chop bananas and strawberries
  3. Make a coating by combining cinnamon and coconut
  4. Gently separate roasted almonds and combine with coat
  5. Add toppings
  6. Garnish with extra honey and cinnamon if required
