This recipe is great for those days when you need something filling, but are also trying to reduce carb content. A great meal as a go between salad and starchy winter foods.
Sooo…here’s what you will need:
Ingredients:
Potato rosti (Optional, can also use ready made or substitute with bubble and squeak)
1 potato, shredded
Half brown onion
Omelette
3 tablespoons mozarella or liddells lactose free shredded cheese
2 tablespoons diced ham or bacon
Egg
1 teaspoon shallots
1/2 carrot, shaved
Side Salad (Optional)
Half cup spinach leaves
Half avocado
Half cucumber

1. Combine shredded potato and brown onion together, place on white paper towel and remove excess moisture. Place mixture in an egg ring, and roast for 10 mins at 180°C or until crisp.

2. Mix mozarella, 1/4 shaved carrot, shallots and bacon together in a bowl to create filling.

3. Whisk egg and slowly combine with filling. Cook for 3-4 mins till omelette is brown and well done.

4. Roughly chop cucumber, avocado and combine with extra shaved carrot. Mix with spinach leaves. Toss together with a dressing of salt and vinegar.

5. Remove potatoes and omelette and serve.
