Ah mushrooms….You either love them or hate them. As a big lover of mushrooms from an early age, I was looking to create an of appetisers which was easy, cost effective and fast. These stuffed mushrooms, were the perfect zesty treat to start the evening
Ingredients
- 600 g white button mushrooms
- 1 cup breadcrumbs or Arnotts Cheds biscuits
- 1/2 cup bacon bit
- 1 cup cheddar cheese
- 3 tablespoons paprika
- 2 eggs
- 1/4 cup vegetable oil
- 4 tablespoons chopped coriander. (If you’re not a coriander fan, swap with chives).
- 1 white onion sliced.
- Peri peri sauce, to serve.
Method
Preheat oven to 180ºC
- Brush both sides of mushrooms with vegetable oil
- Combine bacon, paprika, egg and 4 tablespoons coriander. Keep 1/4 cheese and coriander as reserve.
- Top mushrooms with mixture. Sprinkle on breadcrumbs.
- Beat egg and coat mushrooms.
- Flavour with salt and pepper
- Line a baking tray, and place mushrooms reasonably apart.
- Place in oven and bake for 35-40 mins or until mushrooms have a golden crust.
- Spread sliced onion, extra cheese and coriander across serving dish.
- Place mushrooms across bowl. Serve with peri peri sauce.
