Spicy Stuffed Mushrooms

Ah mushrooms….You either love them or hate them. As a big lover of mushrooms from an early age, I was looking to create an of appetisers which was easy, cost effective and fast. These stuffed mushrooms, were the perfect zesty treat to start the evening

Ingredients

  • 600 g white button mushrooms
  • 1 cup breadcrumbs or Arnotts Cheds biscuits
  • 1/2 cup bacon bit
  • 1 cup cheddar cheese
  • 3 tablespoons paprika
  • 2 eggs
  • 1/4 cup vegetable oil
  • 4 tablespoons chopped coriander. (If you’re not a coriander fan, swap with chives).
  • 1 white onion sliced.
  • Peri peri sauce, to serve.

Method

Preheat oven to 180ºC

  1. Brush both sides of mushrooms with vegetable oil
  2. Combine bacon, paprika, egg and 4 tablespoons coriander. Keep 1/4 cheese and coriander as reserve.
  3. Top mushrooms with mixture. Sprinkle on breadcrumbs.
  4. Beat egg and coat mushrooms.
  5. Flavour with salt and pepper
  6. Line a baking tray, and place mushrooms reasonably apart.
  7. Place in oven and bake for 35-40 mins or until mushrooms have a golden crust.
  8. Spread sliced onion, extra cheese and coriander across serving dish.
  9. Place mushrooms across bowl. Serve with peri peri sauce.
